Candied Citrus Peel
This basic sweet is delicious served with coffee after the main event.
Peel from two large thick skinned grapefruit or other large citrus fruit, removed in quarters
250G good quality dark chocolate.
Put the peel into a saucepan with enough cold water to cover and boil for 15 minutes. drain, cover with fresh cold water and boil again, repeat again until the peel is tender. d rain and cut into strips. put the sugar in a saucepan with 160ml water and dissolve. add the peel and boil for 40 minutes, or until the syrup is dissolved. drain and then dry on parchment paper for 4-5 hours. roll in sugar if you like or alternatively melt the chocolate and dip each strip into the chocolate. leave on wire rack to dry.
