I am currently in the planning stages for our organic vegetable garden, which we plant each year at the front of the Hotel. I love going through the seed catalogues on these dark evenings. Each year, I grow a variety of vegetables and herbs like beetroot, leeks, red cabbage, swiss chard, onions, thyme, rosemary and all the produce will be used in the kitchen when we reopen on April 1st.
A the moment, the state of the Garden is not good after a very cold winter, and there is lots of digging to be done. I have yet to cut back a lot of last years growth – normally I get this done in November or early December but this year, the cold snap arrived so early that I did not get the chance! However, I did get the roses pruned. Last year, we had a great display of roses in June. Most of my roses are off the old varieties.
I will start sowing the vegetable and flower seeds around mid-February in a tunnel and in keeping with Irish tradition, our potatoes will go down around St Patricks Day.
