Lemon Biscuits

100g butter

3 tbsp caster sugar

175g plain flour

grated rind of 1 lemon

juice of 1 lemon

1 small egg, beaten

1.  Cream the butter and sugar until light.  add the flour, lemon rind and juice and beaten egg.  Mix well and leave for 1 hour.  Drop small spoonfulls onto a greased baking tray and bake at 180C or gas mark 4 for 15-20 minutes.  Makes about 30.
